Every racing game on your phone offers the same choice and most people pick wrong on instinct. Touch feels safer because you can see your inputs, but tilt usually gives finer control once you adjust to it.
Tilt works best when the game has smoothing built in — a tiny bit of lag that stops every hand tremor from wrecking your line. Without that, tilt turns twitchy and you'll hate it. Test it on a straight before committing.
Touch controls win in bumpy environments. On a train or in a car as a passenger, tilt becomes useless because the world is already moving. I keep a mental note of which games let you swap mid-session without restarting.
My honest advice: give tilt three full races before you decide. Most people quit after one bad lap and never discover how much more precise it can be.
